Caramelised Root Veg A hearty vegetarian soup

1 medium potato - diced

2 medium carrots - diced

1 small swede - diced

1 turnip - diced

1 leek - sliced

1 parsnip - diced

426ml vegtable stock (3/4 pint)

25g Butter

1 tbsp honey

salt and pepper


Place half the potato, carrots and swede in a pan, followed by all of the turnip, leek, parsnip and veg stock. Bring to the boil, then cover and simmer for 20 mins.

Blend until smooth and keep to one side. Melt the butter in a pan, add the remaining potato, carrot and swede, then gently cook until lightly brown. Add the honey and allow to caramelise on a medium heat for 7 mins.

Add the blended soup, season to taste, then stir well and serve.
