Mediterranean Pasta Salad Authentic Mediterranean pasta salad a perfect BBQ accompaniment

350g of your favourite pasta

3 cloves of garlic, keep in the skins

250g red cherry tomatoes, chopped

250g yellow cherry tomatoes, halved

1 handful olives

2 tbsp fresh chives, chopped

1 handful of basil, torn

½ a cucumber

4 tbsp red wine vinegar

7 tbsp extra virgin olive oil

Salt & pepper



Bring a large pan of salted water to the boil. Throw in the pasta and cloves of garlic, boil until al dente, drain and run under cold water to cool. Put the garlic to one side.

Squash the garlic cloves out of there skins and crush in a bowl. Add the vinegar oil and seasoning, toss everything together and serve.
