Spiced Couscous Salad Spiced couscous salad a summer time favourite

Servings: 4-6

Cook Time: 10 mins


470ml hot chicken stock

2 tbsp olive oil

1 tbsp ground ginger

2 cloves of garlic, finely sliced

1 tsp salt

1 tsp turmeric

½ tsp ground cinnamon

¼ tsp ground cumin

280g dried couscous

150g raisins

2 tbsp lemon or lime juice

1 large carrot, grated

1 red pepper diced  



Bring the stock and all the spices, garlic and oil to the boil. Stir in the couscous and remove from the heat, leave to stand for 10mins. Fluff with a fork and stir through vegetables and lemon or lime juice. Season with salt and pepper.
