Cheese & Cauliflower Soup A creamy soup with a suttle hint of lancashire cheese.

Cook Time: 35 - 40 mins


1 large cauliflower - cut into flourets
1 onion - sliced
2 potatoes - peeled & chopped
1 clove garlic - crushed
100ml double cream - optional
600ml chicken or veg stock
150g good quality lancashire cheese


Fry onions and garlic till soft and add the cauliflower and potatoes, cover with stock and simmer till potatoes go soft.

Remove from heat and blitz with the cheese, season with salt & pepper to taste then stir in the cream if using. Serve with crusty bread.
